Extra virgin olive oil
Garlic
Red pepper
Desired number of muscles
Thyme
Parsley
Grated Romano cheese
Splash of dry white wine

Soak the muscles in water before cooking to open them up. Sauté' the garlic, red pepper, and some of the thyme. Add the muscles after the sauté' is complete and stir. Pour in the white wine and cover for about 7-10 minutes until the liquid is reduced and all flavors have matured in the pan.

Add the parsley and the remaining thyme and stir vigorously. Serve.


The Neighborhood Cellar Good, Simple Shrimp Recipe
Shrimp
Extra virgin olive oil
Garlic
Fresh parsley
Oregano
Salt
Red pepper
Lemon juice

Shell and slice shrimp down back, removing black vein. Leave tail intact. Arrange in one layer on the bottom of a broiler pan. In small saucepan gently sauté olive oil. Add garlic, oregano, parsley, and red pepper and pour over shrimp. Toss around to coat them all well. Broil about 4" from top, for about 5 minutes. Sprinkle with lemon juice.
